Zara Madrusan knows a thing or two about entertaining. Together with husband Michael, she is the co-director of Made in the Shade, the umbrella hospitality company behind some of Melbourne’s best bars including Heartbreaker, Bar Margaux and The Everleigh – the bar where it all began.

The Madrusans may be the doyennes of the Melbourne bar scene now, but six short years ago, things were very different. Zara had just arrived from London, where she had been working in hospitality after finishing up studying theatre and performance.
